Mini Cheesecakes

12 vanilla wafers (I used lemon cookies that fit)
1 package of cream cheese, 8 oz., softened
1/2 c. sugar
1 1 tsp. vanilla
2 eggs

Line muffin pan with foil liners.

Place one cookie in each liner. Mix cream cheese, vanilla and sugar on medium speed until well-blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 25 min. at 325 degrees F.

Remove from pan when cool. Chill. Top with fruit, preserves, nuts or chocolate.

    I made that exact recipe for EG’s bday dinner last Sunday! Only I did use the Nilla Wafer cookies, since he LOVES them.
    I also made an oreo cheesecake and a pumpkin cheesecake (from a mix, so it was easy!)

    We can’t have Nilla wafers, but there are nice substitutes (just $$). Pretty good recipe, and easy, too!
