Rice-A-Roni Substitute

If you use this and like it, do let me know. I don’t remember where I got this, to be honest, but I’m adding it to our menu this week. Well, that’s the intention anyway.

2 cups uncooked rice, pref. long-grain
1 Cup broken Vermicelli or angel hair (broken into 1 inch pieces)
1/4 cup dried parsley flakes
2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp dried thyme
1/2 tsp celery salt
Mix all ingredients and store in an air tight container

To use:
Shake or stir died mixtrue well. Place 1 cup mix and 2 tbsp butter in a heavy sauce pan then brown the rice and noodles. Once everything is browned add 2 1/4 cups of broth and bring to a boil ; cover and reduce heat. Simmer for 15 minutes or until rice is tender and the broth has been absorbed.

Can add: minced or chopped veggies.

    I made it tonight — turned out quite well! I use the Kitchen Basics stock instead of broth, because it’s got so much flavor.

    Thank you! Did you add any veggies or anything? Might be nice with dried tomatoes. There’s a farm near us that sells smoked, dried tomatoes. I’ve not been over there to try any yet, but they sound so good.
