Menu This Week

This is the idea and, Lord willing, I’ll stick to it.

Monday ~ Spaghetti, salad, bread (double batch of spaghetti sauce)

Tuesday ~ White chili (chicken and cannelini beans with diced chili), sweet corn masa, tortilla chips

Wednesday ~ Thai chicken pasta with broccolini and red pepper strips

Thursday ~ Lasagna or mannicotti (probably mannicotti)

Friday ~ Pizza night

Leftovers will take us through lunch and the weekend. Do me a favor, somebody? Ask me how I did and keep me accountable, ok? And what can I do with lots of chicken legs? Maybe oven fry those for next week.

Off to go grocery shopping now.

    You can make Adobo with lots of chicken legs. Whenever I make it for lots of people I always use legs and thighs since it’s easier that way!
