Red Beans, Rice & Sausage

1 c. brown rice
2 1/2 c. water

Prepare rice according to package directions.

1 package Hillshire Farm Smoked Beef Sausage, chopped
1 onion, chopped
1 small green pepper, chopped
4 garlic cloves, minced
2 tbs. butter
1/2 tsp. oregano (of whole leaf, smush a bit)
1/2 tsp. cumin (or more if you like it)
1 can red kidney beans, 15 oz.
1 can diced fire-roasted tomatoes
s&p to taste

In a pan, melt the butter. Add garlic, onions and green bell pepper. Saute until the onion is nearly transparent; add sausage pieces. Saute until sausage is lightly browned.

Add cans of beans and tomatoes, undrained. Add seasonings and simmer until everyone is happy, happy, happy. Serve over brown rice.

Traditionalists will want to add *actual* cajun seasonings like cayenne. But we have Tabasco so if people want that around here, they can add it afterwards. Maybe I will have some because I need help in the sinus department. Tabasco, by the way, is ok on NM’s diet (just the original version).
