Zucchini Patties

Based on this recipe at Allrecipes.com
I made a few changes based on some of the feedback
Ingredients:
2 cups grated zucchini
2 eggs, beaten
1/4 cup minced onion
2-4 cloves of garlic, very finely minced
2/3 c. potato flakes
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
salt and pepper to taste
1 tsp. italian spice (used a mixture of thyme, oregano and basil)
2 tablespoons peanut oil
Directions:
1. In a medium bowl, combine the all the ingredients except oil. Stir well enough to distribute ingredients evenly.
2. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, flatten and cook for a few minutes on each side until golden.
Next time, I might try a mixture of zucchini and carrots and change the spices for curry and see how that goes. It’s the cheese that makes this yummy, though. My kids love them even with the specks of green! NM eats them inside of his grilled cheese sandwiches.
