Yes, this was dinner last night. It. Was. AMAZING.

My hubby has gotten pretty good at wielding a pair of tongs and working his barbecue.

You don’t want me to tell you what it was like because it was too yummy. But I will anyway.

The corn, red onion and red bell pepper were grilled until they were charred “just so.” I got the nibs off the corn cob, chopped the red onion* and then peeled and diced the red pepper. Then they were tossed in a dressing with lime, cumin, salt, pepper and the juice from the bell pepper. So good.

The scallops were really simple. He soaked a cedar plank for an hour then heated over the grill for 10 minutes. He flipped the plank and set on the scallops (I don’t remember if they had anything on them). Then they smoked over the coals for around 10 minutes until they were done. The cedar flavor really came through in the scallops: so smoky but left the scallop-y identity intact.

He wasn’t too happy that I took forever to take pictures of this dish. And after I started eating, I wasn’t surprised that he felt that way!

The kids? They had hotdogs for dinner, can you believe it? One day when their taste buds become more adventurous, they will be sad they said no to this.

I’m thinking the barbecue needs to have a good name and I’m open for votes.

*I don’t really like red onions so I picked them out. It was still really good, though.
