Must Love Mushrooms Soup

I know it’s not freezing like some places in the US are right now, but it’s nippy (and windy) enough to make me want to eat soup. The other day I was really craving some for lunch and fortunately I had a large dub of dried mushrooms. YES.
First, take about 3/4 to nigh 1 cup of dried mushrooms. I don’t mess around. I love mushrooms and I love them even more when they’re dried and reconstituted. And you will do just that by adding 1 c. of water to them and boiling them for three minutes in the microwave. You could just use your tea pot to boil water if you have an aversion to microwaves. But waiting isn’t optional. Wait about 20 minutes for the water to do its job. Oh, ok, you could probably get away with just 10 like I did.
Into a pot, melt 1 tbs. butter over medium heat and whisk in 1tbs. of flour to make a light roux (oohhh fancy word alert). Take the water you used to reconstitute the mushrooms and slowly add it in a little at a time, whisking until everything in the pot is an even consistency before adding more. When that’s all gone, add some milk the same way. You’ll need to add enough milk to make one cup when you add it to the mushroom water. Add a tsp. of beef bouillon powder and pepper. Add the mushrooms and let it all simmer for just a couple of minutes.

I have a strong emotional connection to mushroom soup. My parents both loved it, second only to cream of asparagus. We’d have soup with dinner most nights and usually my mom wouldn’t let me eat too much because she wanted me to fill up on meat (I was skin and bones) but she would let me eat as much mushroom soup as I wanted.
