Stuffed French Toast

Yummmmmy!

The french toast:
1/2 loaf of french bread, give or take, sliced 1/2″ thick

Dipping batter:
4 eggs
3/4 c. milk
generous helping of freshly ground nutmeg

Whisk all.

In a skillet, melt some butter. Dip the bread on both sides and cook until golden. Flip and work on the other side. Keep in oven set to 200 degrees F while cooking the rest of the slices.

The stuffing:
8 oz. cottage cheese
8 oz. cream cheese, softened
3 tbs. sugar
1 tsp. of vanilla

Put all in a food processor and process until you don’t recognize the cottage cheese anymore. Place a generous helping between two pieces of french toast. Oh yes, there will be left overs. In that case, just make some crepes and use this mixture to fill them along with some jam.

If I were you, I’d also add some orange marmalade or lemon curd or something sweet and zingy like that then top with powdered sugar. Or you could just pour on real maple syrup like we did.

    do you know “fruit mustards”? i.e. orange mustard? it would be perfect together with the cheese stuffing… (mmm)

    Never heard of fruit mustards! Are they a German thing?
